Okay, so today I made bomb soup. Even the kids loved it. Before I added the noodles (ditalini) it was vegan. The kids ate the vegan version first. Here are the ingredients and the way I made it:
Boil potatoes and carrots (this makes the soup thick sans milk or thickener)
blend the combination in a blender
Lightly saute 2 medium onions and 4 cloves of garlic in olive oil
Add potato/carrot mixture to onions and garlic
Add tomato sauce of your choice
Cook on low-med
Cut up mushrooms and zucchini and add to mixture
Add celery salt to taste
Lastly add spinach leaves
Pasta...if you please.
